They're not pucker your mouth sour, they're more tart--so your taste buds will experience a sweet, tart, zing rather than a crippling almost permanent mouthwatering pucker. These gourmet beans allow you to mix flavors and get a new and interesting flavor. But I don't think it really matters what you mix together, great taste is great taste.
