Makes 9 to 12 Matzo Balls. You Will Need: Small bowl; 2 Eggs; 2 Tablespoons vegetable oil; 2 1/2 Qts. cold water; 4 Qt. pot. 1. Mix: In a small bowl, blend 2 eggs and 2 tablespoons of vegetable oil. Add matzo ball mix (package 1) and stir with fork until evenly mixed. Place bowl in refrigerator for 15 minutes. Add soup mix (package 2) to 2.5 qts water and bring to a boil in a 4 qt pot. Wet hands and form batter into balls approximately 1 inch in diameter. 2. Boil: Drop into boiling soup; cover tightly; reduce heat and simmer for 20 minutes.
